How To Make Lainy’s Ube Cake Recipe

A delicious and moist Filipino cake made with ube (purple yam) that’s perfect for any occasion.

Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 2 eggs
  • 1/2 cup ube jam or halaya
  • 1/2 cup buttermilk
  • 1 tsp vanilla extract
  • whipped cream, for topping (optional)

Instructions

  1. Preheat oven to 350°F and grease a 9-inch cake pan.

  2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt.

  3. In a large bowl, cream together butter and sugar until light and fluffy.

  4. Beat in eggs one at a time, then stir in ube jam.

  5. Gradually stir in the flour mixture and buttermilk alternately, beginning and ending with the flour mixture. Stir in vanilla extract.

  6. Pour the batter into the prepared cake pan and smooth the top with a spatula.

  7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.

  8. Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

  9. Serve slices with whipped cream, if desired.
