Ingredients

  • 3 eggs
  • 1/2 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1/2 tsp baking powder
  • Pinch of salt
  • 1/4 cup strong brewed coffee, cooled
  • 1 tsp vanilla extract
  • 1/2 cup mascarpone cheese
  • 1/2 cup heavy cream
  • 1/4 cup powdered sugar
  • 2 tbsp cocoa powder, for dusting
  • Ladyfingers, for layering
  • 1/4 cup coffee liqueur, for soaking ladyfingers
  • 1/4 cup dark chocolate shavings, for garnish

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and line a 8-inch round cake pan with parchment paper.

  2. In a mixing bowl, beat the eggs and sugar together until pale and fluffy.

  3. Sift in the flour, cocoa powder, baking powder, and salt. Gently fold the dry ingredients into the egg mixture.

  4. Stir in the cooled coffee and vanilla extract until well combined.

  5. Pour the batter into the prepared cake pan and smooth the top. Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

  6. Remove the cake from the oven and let it cool completely in the pan.

  7. In a separate bowl, whip the mascarpone cheese, heavy cream, and powdered sugar together until stiff peaks form.

  8. Once the cake has cooled, remove it from the pan and cut it in half horizontally.

  9. Place one layer of the cake on a serving platter. Brush the ladyfingers with coffee liqueur and arrange them on top of the cake layer.

  10. Spread a layer of the mascarpone mixture over the ladyfingers.

  11. Place the second layer of cake on top and repeat the process with the ladyfingers and mascarpone mixture.

  12. Dust the top of the cake with cocoa powder and sprinkle with dark chocolate shavings.

  13. Refrigerate for at least 2 hours before serving to allow the flavors to meld together.

  14. Slice and serve chilled.
