How To Make The Ritz-Carlton’s Tiramisu
A classic Italian dessert made up of layers of coffee-soaked ladyfingers and a creamy mascarpone filling.

Ingredients
- 2 egg yolks
- 1/2 cup granulated sugar
- 8 oz mascarpone cheese
- 1/2 cup heavy cream
- 1/2 cup strong espresso or coffee
- 16 ladyfingers
- Cocoa powder for dusting
Instructions

In a medium-sized bowl, whisk the egg yolks and sugar together until the mixture is pale and thick.

Add the mascarpone cheese to the egg mixture and beat until smooth.

In a separate bowl, whip the heavy cream until it holds firm peaks.

Fold the whipped cream into the mascarpone mixture until fully combined.

Pour the espresso or coffee into a shallow bowl.

Quickly dip each ladyfinger into the espresso, making sure not to soak them.

Begin arranging the dipped ladyfingers in a single layer in the bottom of a serving dish.

Spoon half of the mascarpone mixture over the ladyfingers, spreading it to cover them completely.

Repeat with another layer of dipped ladyfingers and remaining mascarpone mixture.

Cover and chill the tiramisu for at least 6 hours.

Before serving, dust the top of the tiramisu with cocoa powder.
