This Pistachio Poke Cake is a perfect dessert with a soft and tender crumb, rich flavor, and topped with whipped cream and chopped pistachios.

Ingredients
- 1 box of white cake mix
- 3 eggs
- 1/3 cup of vegetable oil
- 1 cup of boiling water
- 1 package of instant pistachio pudding mix
- 1 1/2 cups of cold milk
- Whipped cream
- Chopped pistachios
Instructions

Preheat the oven to 350°F.

In a large mixing bowl, combine the cake mix, eggs, and vegetable oil. Mix well.

Gradually add the boiling water to the mixture and stir until well combined.

Pour the batter into a greased 9×13 inch baking dish and bake for 35 minutes or until a toothpick inserted in the center comes out clean.

In a separate bowl, whisk together the instant pistachio pudding mix and cold milk until fully combined.

Once the cake has finished baking, use the end of a wooden spoon to poke holes all over the cake.

Pour the pudding mixture over the cake, making sure it gets into all the holes.

Let the cake cool completely, then spread whipped cream on top.
