How To Make Mexican Spinach Dip

A creamy and flavorful dip packed with spinach, Mexican spices and cheese. Perfect for game day or any party!

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 jalapeño, seeded, diced
  • 1/2 tsp ground cumin
  • 1/2 tsp smoked paprika
  • 2 cups fresh spinach, packed
  • 1 cup sour cream
  • 1 cup Mexican blend cheese, shredded
  • Salt and pepper to taste
  • Tortilla chips, for serving


  1. Preheat oven to 375°F (190°C).

  2. In a skillet, heat olive oil over medium heat. Add onion, garlic, and jalapeño, stirring occasionally until the onion is translucent and fragrant.

  3. Add cumin, smoked paprika, salt, and pepper, stirring for 1 minute more.

  4. Add spinach to the skillet and cook until wilted, about 2-3 minutes.

  5. In a mixing bowl, combine spinach mixture, sour cream, and 3/4 cup cheese.

  6. Transfer the mixture to a baking dish, then sprinkle the remaining cheese over it.

  7. Bake for 20-25 minutes, until bubbly and golden on top. Serve with tortilla chips.
