Ingredients

  • 4 bell peppers, any color
  • 1 pound ground beef
  • 1/2 cup cooked white rice
  • 1/2 cup diced onion
  • 1/2 cup diced tomatoes
  • 1/4 cup chopped parsley
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F (190°C).

  2. Cut the tops off the bell peppers and remove the seeds and membranes. Place the peppers in a baking dish.

  3. In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

  4. Add the onion, tomatoes, parsley, garlic powder, oregano, salt, and black pepper to the skillet. Cook for 5 minutes, until the onions are softened.

  5. Stir in the cooked rice and 1/2 cup of the shredded cheese.

  6. Spoon the beef and rice mixture into the bell peppers, filling them evenly. Top each pepper with the remaining shredded cheese.

  7. Cover the baking dish with foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, until the peppers are tender and the cheese is melted and bubbly.

  8. Serve hot and enjoy!
