How To Make Chef John’s Stuffed Peppers Recipe

Ingredients
- 4 bell peppers (any color)
- 1 pound ground beef
- 1 cup cooked rice
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (14.5 ounces) diced tomatoes, drained
- 1 cup shredded mozzarella cheese
- Fresh parsley, for garnish
Instructions

Preheat the oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.

In a large skillet, cook the ground beef over medium heat until browned. Drain any excess fat.

Add the onion and garlic to the skillet and cook until the onion is translucent.

Stir in the cooked rice, dried oregano, dried basil, salt, black pepper, and diced tomatoes. Cook for another 2 minutes.

Stuff the bell peppers with the meat mixture and place them in a baking dish.

Bake the stuffed peppers for 30 minutes.

Remove from the oven and sprinkle the shredded mozzarella cheese on top of each pepper.

Return to the oven and bake for an additional 15 minutes, or until the cheese is melted and bubbling.

Garnish with fresh parsley before serving.
