How To Make Clint’s Stuffed Bell Peppers Recipe

Bell peppers stuffed with a mixture of ground beef, rice, and vegetables, topped with melted cheese.

Ingredients

  • 4 bell peppers, tops removed and seeded
  • 1 lb ground beef
  • 1 cup cooked rice
  • 1/2 onion, chopped
  • 1/2 cup chopped celery
  • 1/2 cup chopped mushrooms
  • 1 can diced tomatoes, drained
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat oven to 375°F.

  2. In a skillet, cook ground beef until browned. Drain off excess fat.

  3. Add onion, celery, mushrooms, diced tomatoes, garlic powder, salt, and pepper to the skillet. Cook until vegetables are tender.

  4. Stir in cooked rice.

  5. Fill each bell pepper with the beef and rice mixture. Place in a baking dish.

  6. Cover with foil and bake for 45 minutes.

  7. Remove foil and top each bell pepper with shredded cheddar cheese. Bake for an additional 15-20 minutes until cheese is melted and bubbly.
