How To Make Stuffed Red Bell Pepper Recipe
Bell peppers stuffed with a savory mix of ground beef, rice, and vegetables, baked to perfection.

Ingredients
- 4 large red bell peppers, tops removed and seeded
- 1 pound lean ground beef
- 1 cup cooked rice
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 small zucchini, diced
- 1 small yellow squash, diced
- 1 teaspoon dried oregano
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup tomato sauce
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions

Preheat oven to 375°F.

In a large skillet over medium-high heat, cook ground beef until browned, stirring frequently.

Add onion and garlic, sauté until softened.

Add zucchini and yellow squash, cook for 2-3 minutes more.

Stir in cooked rice, oregano, salt, and black pepper.

Remove from heat and stir in tomato sauce and Parmesan cheese.

Stuff each bell pepper with beef mixture and place in a baking dish.

Cover with foil and bake for 30 minutes.

Remove foil and bake for an additional 15 minutes or until peppers are tender and filling is hot and bubbly.

Sprinkle with chopped fresh parsley before serving.
