How To Make Mexican Stuffed Mini Peppers

Ingredients

  • 12 mini peppers, halved and seeded
  • 1 cup cooked black beans
  • 1/2 cup corn
  • 1/2 cup diced tomatoes
  • 1/4 cup diced onion
  • 1/4 cup chopped cilantro
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • 1/2 cup shredded Mexican cheese blend

Instructions

  1. Preheat oven to 375°F.

  2. In a bowl, combine black beans, corn, tomatoes, onion, cilantro, spices, salt, and pepper.

  3. Spoon filling into each pepper half.

  4. Place stuffed peppers onto a baking sheet and sprinkle each one with cheese.

  5. Bake for 18-20 minutes, or until peppers are tender and cheese is melted.

  6. Serve warm and enjoy!
