Ingredients
- 12 mini peppers, halved and seeded
- 1 cup cooked black beans
- 1/2 cup corn
- 1/2 cup diced tomatoes
- 1/4 cup diced onion
- 1/4 cup chopped cilantro
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- 1/2 cup shredded Mexican cheese blend
Instructions

Preheat oven to 375°F.

In a bowl, combine black beans, corn, tomatoes, onion, cilantro, spices, salt, and pepper.

Spoon filling into each pepper half.

Place stuffed peppers onto a baking sheet and sprinkle each one with cheese.

Bake for 18-20 minutes, or until peppers are tender and cheese is melted.
