How To Make Mexican Quesadillas Recipe

Ingredients
- 8 flour tortillas
- 2 cups shredded cooked chicken
- 2 cups shredded cheese (cheddar or Monterey Jack)
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 jalapeno pepper, seeded and chopped
- 2 cloves garlic, minced
- 1 tsp chili powder
- 1 tsp ground cumin
- Salt and black pepper, to taste
- 1 tbsp olive oil
- Salsa, sour cream, and guacamole, for serving
Instructions

Preheat a large skillet or griddle over medium-high heat.

In a bowl, mix together the chicken, cheese, onion, red bell pepper, jalapeno pepper, garlic, chili powder, ground cumin, salt, and black pepper.

Spoon the filling onto one side of each tortilla and fold the other side over to create a half circle.

Brush both sides of each quesadilla with olive oil.

Cook the quesadillas on the preheated griddle until crispy and golden brown on each side, about 3 to 4 minutes per side.

Cut each quesadilla into 3-4 wedges and serve with salsa, sour cream, and guacamole.
