How To Make Mexican Spinach Dip
A creamy and flavorful dip packed with spinach, Mexican spices and cheese. Perfect for game day or any party!
Serves:
Ingredients
- 1 tbsp olive oil
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 jalapeño, seeded, diced
- 1/2 tsp ground cumin
- 1/2 tsp smoked paprika
- 2 cups fresh spinach, packed
- 1 cup sour cream
- 1 cup Mexican blend cheese, shredded
- Salt and pepper to taste
- Tortilla chips, for serving
Instructions

Preheat oven to 375°F (190°C).

In a skillet, heat olive oil over medium heat. Add onion, garlic, and jalapeño, stirring occasionally until the onion is translucent and fragrant.

Add cumin, smoked paprika, salt, and pepper, stirring for 1 minute more.

Add spinach to the skillet and cook until wilted, about 2-3 minutes.

In a mixing bowl, combine spinach mixture, sour cream, and 3/4 cup cheese.

Transfer the mixture to a baking dish, then sprinkle the remaining cheese over it.

Bake for 20-25 minutes, until bubbly and golden on top. Serve with tortilla chips.
