Ingredients
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies, drained
- 2 tsp chili powder
- 1 tsp cumin
- 1/2 tsp paprika
- Salt and pepper to taste
- 8 small flour tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 2 cups enchilada sauce
Instructions

Preheat the oven to 375°F (190°C).

In a large skillet, brown the ground beef over medium heat until fully cooked. Drain any excess grease.

Add the diced onion, minced garlic, and diced bell pepper to the skillet. Cook for an additional 5 minutes.

Stir in the black beans, diced tomatoes with green chilies, chili powder, cumin, paprika, salt, and pepper. Cook for another 5 minutes, allowing the flavors to meld together.

Warm the flour tortillas in the microwave for 30 seconds to make them more pliable.

Spoon about 1/3 cup of the beef mixture onto each tortilla and roll it up tightly. Place the enchiladas seam-side down in a greased baking dish.

Pour the enchilada sauce over the tortillas, making sure they are fully covered. Sprinkle the shredded cheese on top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Serve hot and garnish with your favorite toppings such as diced avocado, sour cream, and fresh cilantro.
