Ingredients
- 1 cup dried lentils
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can diced tomatoes
- 4 cups vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried basil
- ½ tsp dried rosemary
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

Rinse the lentils under cold water and drain.

In a slow cooker, combine the lentils, onion, carrots, celery, garlic, diced tomatoes, vegetable broth, oregano, thyme, basil, rosemary, salt, and pepper.

Stir well to combine.

Cover and cook on low heat for 6 hours or until the lentils are tender.

Serve hot, garnished with fresh parsley.
