How To Make Tiramisu Meringue Roulade

Ingredients
- 4 egg whites
- 3/4 cup granulated sugar
- 1 tsp vanilla extract
- 1/4 cup all-purpose flour
- 1 tsp instant coffee
- 1/4 cup boiling water
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- 1/2 cup heavy cream, whipped
- Cocoa powder, for dusting
Instructions

Preheat oven to 350°F (180°C) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites until soft peaks form. Gradually add in the granulated sugar and continue beating until stiff peaks form.

Gently fold in the vanilla extract and flour until well combined.

Spread the meringue mixture onto the prepared baking sheet in an even layer.

Bake for 12-15 minutes, or until the meringue is golden and set.

While the meringue is baking, dissolve the instant coffee in boiling water and set aside to cool.

In a separate bowl, combine the mascarpone cheese and powdered sugar until smooth and creamy.

Gently fold in the cooled coffee mixture into the mascarpone mixture until well combined.

Once the meringue is cooled, carefully transfer it to a clean surface and spread the mascarpone mixture evenly over the top.

Carefully roll up the meringue from the short end, using the parchment paper to help you.

Place the rolled meringue onto a serving platter and refrigerate for at least 2 hours, or until set.

Before serving, dust the Tiramisu Meringue Roulade with cocoa powder.
