How To Make Minted Potato Salad

Ingredients
- 1 ½ pounds baby potatoes, halved
- 1 cup fresh mint leaves, chopped
- ½ cup red onion, finely diced
- ½ cup celery, sliced
- ¼ cup mayonnaise
- 2 tablespoons Dijon mustard
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions

In a large pot of salted boiling water, cook the potatoes until tender, about 10-15 minutes. Drain and let cool.

In a large mixing bowl, combine the cooked potatoes, chopped mint, diced red onion, and sliced celery.

In a small bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, salt, and pepper.

Pour the dressing over the potato mixture and gently toss until well coated.

Serve chilled and garnish with extra mint leaves, if desired.
