How To Make Mini Dark Chocolate, Blackberry & Bay Pavlovas

Ingredients
- 4 egg whites
- 1 cup granulated sugar
- 1 tsp cornstarch
- 1 tsp white vinegar
- 1/2 tsp vanilla extract
- 1/4 cup dark chocolate, chopped
- 1 cup fresh blackberries
- 4 fresh bay leaves
- Whipped cream, for serving
Instructions

Preheat the oven to 250°F (120°C) and line a baking sheet with parchment paper.

In a clean mixing bowl, beat the egg whites until soft peaks form.

Gradually add the sugar, cornstarch, vinegar, and vanilla extract while continuing to beat until stiff peaks form.

Gently fold in the chopped dark chocolate.

Spoon the mixture into 4 equal-sized mounds on the prepared baking sheet.

Use the back of a spoon to create a well in the center of each mound.

Place a fresh bay leaf in each well.

Bake in the preheated oven for 1 hour and 30 minutes or until the pavlovas are crisp and dry.

Remove from the oven and allow to cool completely on the baking sheet.

Once cooled, carefully remove the pavlovas from the parchment paper.

Top each pavlova with fresh blackberries and serve with a dollop of whipped cream.
