How To Make Meringue Roulade with Passion Fruit Cream

- 4 egg whites
- 1 cup granulated sugar
- 1 tsp cornstarch
- 1 tsp white vinegar
- 1 cup heavy cream
- 1/4 cup powdered sugar
- 1/2 cup passion fruit pulp
Instructions

Preheat your oven to 350°F (180°C) and line a baking tray with parchment paper.

In a large mixing bowl, whisk the egg whites until they form soft peaks.

Gradually add the granulated sugar, cornstarch, and vinegar while continuing to whisk until stiff peaks form.

Spread the meringue mixture onto the prepared baking tray, creating a rectangular shape.

Bake in the oven for 15-20 minutes or until the meringue is crisp and slightly golden.

While the meringue is baking, whip the heavy cream and powdered sugar until soft peaks form.

Gently fold in the passion fruit pulp into the whipped cream.

Once the meringue has cooled, spread the passion fruit cream evenly over the surface.

Starting from one end, carefully roll up the meringue into a log shape.

Transfer the meringue roulade to a serving platter and refrigerate for at least 1 hour to set.
