  • 4 cups mixed salad greens

  • 1 cup radishes, thinly sliced
  • 1 cup carrots, grated
  • 1/4 cup red onion, thinly sliced
  • 1/4 cup fresh herbs (such as basil, parsley, or mint), chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper, to taste

Instructions

  1. In a large bowl, combine the salad greens, cherry tomatoes, cucumbers, radishes, carrots, red onion, and fresh herbs.

  2. In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.

  3. Pour the dressing over the salad and toss to combine.

  4. Serve immediately.
