How To Make Homemade Salami

Ingredients

  • 2 lbs ground pork
  • 2 tsp curing salt
  • 2 tbsp paprika
  • 2 tsp garlic powder
  • 2 tsp black pepper
  • 1 tsp dried thyme
  • 1 tsp fennel seeds
  • 1/2 tsp cayenne pepper

Instructions

  1. In a large bowl, mix together the ground pork, curing salt, paprika, garlic powder, black pepper, dried thyme, fennel seeds, and cayenne pepper until well combined.

  2. Shape the mixture into a log shape and wrap tightly in plastic wrap.

  3. Place the wrapped salami in the refrigerator and let it cure for at least 24 hours.

  4. Preheat your oven to 175°C (350°F).

  5. Unwrap the salami and place it on a baking sheet.

  6. Bake for 3-4 hours, or until the internal temperature reaches 70°C (160°F).

  7. Remove from the oven and let it cool completely before slicing.

  8. Serve and enjoy!
