Ingredients
- 1 cup salted codfish, soaked and flaked
- 1 cup all-purpose flour
- 1 small onion, finely chopped
- 1 scotch bonnet pepper, seeded and finely chopped
- 2 cloves garlic, minced
- 2 green onions, finely chopped
- 1/4 cup chopped fresh parsley
- 1/4 teaspoon baking powder
- 1/2 teaspoon ground black pepper
- 1/2 cup water
- Vegetable oil for frying
Instructions

In a large bowl, combine the flaked salted codfish, flour, onion, scotch bonnet pepper, garlic, green onions, parsley, baking powder, and black pepper.

Gradually add water to the mixture, stirring well until a thick batter forms.

Heat vegetable oil in a deep skillet or Dutch oven over medium heat.

Drop spoonfuls of the batter into the hot oil and fry until golden brown, turning once to cook evenly, about 3-4 minutes per side.

Remove the fritters from the oil and drain on paper towels to remove excess oil.
