Ingredients

  • 2 lbs beef brisket
  • 1 small head of cabbage, cored and quartered
  • 4 medium potatoes, peeled and quartered
  • 4 large carrots, peeled and cut into chunks
  • 1 onion, peeled and quartered
  • 2 cloves of garlic, minced
  • 1 bay leaf
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. In a large pot, place the beef brisket, garlic, onion, bay leaf, salt, and black pepper. Add enough water to cover the meat.

  2. Bring the pot to a boil, then reduce the heat to a simmer. Cover and cook for 1 hour and 30 minutes.

  3. Add the cabbage, potatoes, and carrots to the pot. Continue to simmer for an additional 30 minutes or until the vegetables are tender.

  4. Remove the beef brisket from the pot and let it rest for a few minutes before slicing it against the grain.

  5. Serve the sliced beef with the boiled vegetables. Garnish with fresh parsley.
