Ingredients

  • 4 ostrich steaks
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 shallot, minced
  • 1 cup Calvados apple brandy
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tbsp Dijon mustard
  • 2 tbsp fresh parsley, chopped

Instructions

  1. Season the ostrich steaks with salt and pepper.

  2. Heat olive oil in a large skillet over medium-high heat. Cook the steaks for 4-5 minutes per side, or until desired doneness. Remove the steaks from the skillet and set aside.

  3. In the same skillet, add the minced shallot and cook until softened, about 2 minutes.

  4. Carefully pour in the Calvados brandy and cook for 2-3 minutes, allowing it to reduce slightly.

  5. Stir in the chicken broth and simmer for an additional 5 minutes.

  6. Reduce the heat to low and whisk in the heavy cream and Dijon mustard. Cook for 2-3 minutes until the sauce thickens.

  7. Return the ostrich steaks to the skillet and cook for an additional 2-3 minutes, allowing them to heat through.

  8. Serve the ostrich steaks with the Calvados sauce, garnished with fresh parsley.
