How To Make West African Peanut Stew

Ingredients

  • 2 tablespoons vegetable oil
  • 1 onion, diced
  • 3 cloves of garlic, minced
  • 1 tablespoon ginger, grated
  • 1 teaspoon cumin
  • 1 teaspoon coriander
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon paprika
  • 1 sweet potato, peeled and chopped
  • 2 carrots, peeled and sliced
  • 1 red bell pepper, diced
  • 1 can of diced tomatoes (14 oz)
  • 4 cups vegetable broth
  • 1 cup smooth peanut butter
  • Salt and pepper to taste
  • Chopped peanuts, for garnish
  • Fresh cilantro, for garnish

Instructions

  1. Heat the vegetable oil in a large pot over medium heat. Add the onion and cook until it becomes translucent, about 5 minutes.

  2. Stir in the garlic, ginger, cumin, coriander, cayenne pepper, and paprika. Cook for an additional 2 minutes, until fragrant.

  3. Add the sweet potato, carrots, red bell pepper, diced tomatoes, and vegetable broth to the pot. Bring to a boil, then reduce heat and simmer for 15-20 minutes, until the vegetables are tender.

  4. In a separate bowl, whisk together the peanut butter with 1 cup of the hot broth from the pot until smooth. Pour the peanut butter mixture back into the pot and stir to combine.

  5. Season with salt and pepper to taste. Simmer for an additional 10 minutes to allow the flavors to meld together.

  6. Serve the West African Peanut Stew hot, garnished with chopped peanuts and fresh cilantro. Enjoy!
