Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into small cubes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 tbsp ginger, grated
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1/2 cup creamy peanut butter
  • 4 cups chicken broth
  • 1 can diced tomatoes
  • Salt and pepper, to taste
  • 1/4 cup chopped fresh cilantro, for garnish

Instructions

  1. Heat a large pot over medium heat and add chicken. Cook until browned on all sides.

  2. Add onion and sauté until translucent. Add garlic, bell pepper, and ginger and cook for 5 minutes.

  3. Stir in smoked paprika and cayenne pepper and cook for 1 minute.

  4. Add peanut butter and stir until melted.

  5. Pour in chicken broth and diced tomatoes. Bring to a boil, then reduce heat and simmer for 25-30 minutes.

  6. Remove from heat and allow to cool slightly. Puree mixture in a blender or food processor until smooth.

  7. Return soup to pot and season with salt and pepper to taste. Serve hot, garnished with cilantro.
