Ingredients

  • 2 cups oats
  • 1 cup milk
  • 2 ripe bananas, mashed
  • 1/4 cup honey
  • 1/4 cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 apple, peeled, cored, and chopped

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin.

  2. In a large bowl, combine oats and milk. Let it sit for 5 minutes.

  3. Add mashed bananas, honey, applesauce, vanilla extract, ground cinnamon, baking powder, and salt. Mix well.

  4. Fold in chopped apples.

  5. Scoop the batter into the prepared muffin tin, filling each cup about 3/4 full.

  6. Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.

  7. Allow the muffins to cool for a few minutes before removing from the tin.

  8. Serve and enjoy!
