Ingredients

  • 2 large beets, boiled and chopped
  • 1 red onion, thinly sliced
  • 1 bell pepper, chopped
  • 1 avocado, chopped
  • 1/2 cup of chopped peanuts
  • 1/4 cup of chopped cilantro
  • 2 tbsp of olive oil
  • 1 tbsp of honey
  • 1 tbsp of lemon juice
  • salt and black pepper to taste

Instructions

  1. In a large bowl, add the chopped beets, red onion, bell pepper and avocado.

  2. In a small bowl whisk together olive oil, honey, lemon juice, salt, and black pepper.

  3. Drizzle the dressing over the salad and toss to combine.

  4. Sprinkle with chopped peanuts and cilantro.

  5. Serve and enjoy!
