Ingredients

  • 1 cup white rice, uncooked
  • 1 can black beans, drained and rinsed

  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt and pepper to taste
  • Toppings as desired (lettuce, cheese, guacamole, salsa, etc.)

Instructions

  1. Cook rice according to package instructions.

  2. Heat olive oil in a large skillet over medium heat. Add garlic and cook for 1 minute.

  3. Add protein and season with cumin, chili powder, salt, and pepper. Cook until fully cooked through.

  4. Add black beans to the skillet and cook for an additional 2-3 minutes.

  5. Assemble the burrito bowls with rice, protein and beans mixture, and desired toppings.
