  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, sliced
  • 1/4 cup olive oil
  • 1/2 tsp kosher salt
  • 1/4 tsp freshly ground black pepper
  • 1/4 tsp dried thyme

Instructions

  1. Preheat oven to 425°F.

  2. In a large bowl, toss together the sliced vegetables, olive oil, salt, pepper, and thyme.

  3. Spread the vegetables out in a single layer on a large baking sheet.
