How To Make Freshii Smokehouse Burrito Recipe

Ingredients

  • 4 large whole grain tortillas
  • 1 cup cooked brown rice
  • 1 can black beans, drained and rinsed
  • 1 small red onion, diced
  • 1 red bell pepper, diced
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1/2 tsp garlic powder
  • Salt and pepper, to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped fresh cilantro
  • 1 lime, cut into wedges
  • Optional toppings: avocado, salsa, sour cream

Instructions

  1. Preheat oven to 350 F.

  2. In a large bowl, mix together the cooked brown rice, black beans, red onion, and red bell pepper.

  3. Add in the smoked paprika, cumin, and garlic powder, along with salt and pepper to taste. Mix until well combined.

  4. Place the tortillas on a baking sheet. Divide the rice and bean mixture evenly onto each tortilla.

  5. Top each burrito evenly with shredded cheddar cheese and fresh cilantro.

  6. Fold up the burritos by folding the left and right sides in towards the center, and then rolling up from the bottom.

  7. Bake the burritos for 10-15 minutes, until the cheese is melted and the tortillas are crispy.

  8. Serve the burritos hot, with a wedge of lime and optional toppings like avocado, salsa, and sour cream.
