How To Make Mimi’s Cafe Buttermilk Pancakes

Fluffy pancakes with a hint of tanginess from buttermilk, served with butter and syrup.

Serves:

Ingredients

  • 2 cups of all-purpose flour
  • 2 tbsp of granulated sugar
  • 2 tsp of baking powder
  • 1 tsp of baking soda
  • Pinch of salt
  • 2 cups of buttermilk
  • 2 eggs
  • 4 tbsp of melted butter
  • Non-stick cooking spray

Instructions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  2. In a separate bowl, whisk together buttermilk, eggs, and melted butter.

  3. Pour the buttermilk mixture into the flour mixture and stir until just combined (some lumps are okay).

  4. Heat a non-stick skillet or griddle over medium heat and spray with non-stick cooking spray.

  5. Using a 1/4 cup measuring cup, pour pancake batter onto the skillet or griddle.

  6. Cook until bubbles start to form on the surface and edges look set, then flip and cook for another 1-2 minutes until golden brown.

  7. Repeat with remaining batter, spraying pan with cooking spray as needed.
