How To Make Michelle Bernstein’s Papas Rellenas Recipe
Crispy potato dumplings stuffed with meat and spices.
Serves:
Ingredients
- 4 large russet potatoes
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 tbsp tomato paste
- 1 tsp ground cumin
- 1 tsp paprika
- Salt and pepper to taste
- 2 eggs, beaten
- 1 cup breadcrumbs
- Oil for frying
Instructions

Peel and boil potatoes until tender. Mash and cool.

In a pan, cook onion and garlic until soft. Add ground beef and cook until browned.

Stir in tomato paste, cumin, paprika, salt, and pepper. Remove from heat.

Form a ball of mashed potatoes. Make a small well in the center and fill with beef mixture. Cover with more mashed potatoes and form into a ball.

Dip each ball in beaten eggs, then coat with breadcrumbs.

Heat oil in a pan and fry balls until golden brown.

Drain on paper towels and serve hot.
