How To Make Mimi’s Cafe’s Corn Chowder Recipe
Creamy and hearty soup with sweet corn and smoky bacon bits.

Ingredients
- 4 slices bacon, chopped
- 1 large onion, chopped
- 2 cloves garlic, minced
- 2 cups frozen corn kernels
- 2 cups chicken broth
- 1 cup heavy cream
- 1 tsp fresh thyme leaves
- 1 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp cayenne pepper
- 2 tbsp chopped fresh parsley
Instructions

In a large pot, cook bacon over medium heat until crisp. Remove with a slotted spoon and set aside.

Add onion and garlic to the bacon fat and sauté until softened.

Add corn kernels, chicken broth, heavy cream, thyme, salt, black pepper, and cayenne pepper. Bring to a simmer and cook for 20 minutes.

Using an immersion blender, blend the soup until it is smooth. Alternatively, transfer the soup to a blender in batches and blend until smooth.

Ladle soup into bowls and sprinkle chopped bacon and parsley on top.
