  • 2 cups all-purpose flour

  • 1/2 cup unsalted butter (cold and cut into small pieces)
  • 1 cup heavy cream
  • 1 teaspoon vanilla extract
  • 1 pint strawberries (hulled and sliced)
  • 2 tablespoons granulated sugar
  • Whipped cream, for topping

Instructions

  1. Preheat oven to 400°F.

  2. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

  3. Cut in cold butter using a pastry cutter or fork until the mixture resembles coarse crumbs.

  4. Stir in heavy cream and vanilla extract until mixture forms a dough.

  5. Turn dough onto a floured surface and knead gently.

  6. Roll dough out to 1/2 inch thickness and cut into rounds using a biscuit cutter.

  7. Place rounds on a baking sheet lined with parchment paper.

  8. Bake for 12-15 minutes or until golden brown.

  9. In a medium bowl, toss strawberries with sugar.

  10. To serve, split shortcake rounds in half and top with strawberries and whipped cream.
