Ingredients
- 2 cooked lobsters, claws and tails removed and meat chopped
- 2 tbsp unsalted butter
- 2 tbsp finely chopped shallots
- 1 garlic clove, minced
- 1/4 cup dry white wine
- 1/2 cup heavy cream
- 2 egg yolks
- 1/4 tsp smoked paprika
- Salt, to taste
- Ground black pepper, to taste
- 1/2 cup grated Parmesan cheese
- 2 tbsp chopped fresh parsley
Instructions

Preheat oven to 375°F.

In a large skillet, melt butter over medium heat. Add shallots and garlic and sauté for 1-2 minutes until fragrant.

Add white wine and increase heat to high. Cook until wine has reduced by half.

Reduce heat to low and add heavy cream, egg yolks, smoked paprika, salt, and pepper. Stir until well combined.

Add chopped lobster to the skillet and stir until coated in the sauce.

Transfer the lobster mixture to a greased baking dish.

Top with grated Parmesan cheese and bake for 20 minutes or until the cheese is melted and bubbly.

Sprinkle with chopped parsley and serve hot.
