How To Make Corner Bakery’s Broccoli Cheddar Soup
Creamy and delicious soup packed with fresh broccoli florets and savory cheddar cheese.

Ingredients
- 1/4 cup butter
 - 1/4 cup all-purpose flour
 - 2 cups milk
 - 2 cups chicken broth
 - 4 cups fresh broccoli florets, chopped into bite-size pieces
 - 1 cup shredded cheddar cheese
 - Salt and pepper, to taste
 
Instructions
- 
Melt butter in a large pot over medium heat. Add flour and whisk until it becomes a paste, cooking for 1-2 minutes.
 - 
Slowly pour in milk and chicken broth, whisking constantly.
 - 
Add broccoli and bring to a simmer. Cook for 15-20 minutes or until the broccoli is tender.
 - 
Use an immersion blender to blend the soup until smooth. Alternatively, carefully transfer the soup to a blender and blend until smooth, then return the soup to the pot.
 - 
Stir in grated cheddar cheese and let it melt. Season with salt and pepper to taste.
 - 
Serve hot with your choice of bread or crackers.
