Serves:

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 2 carrots, peeled and diced
  • 2 celery stalks, diced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 8 cups chicken broth
  • 1 cup long-grain rice
  • 2 cups cooked chicken, shredded
  • Salt and pepper to taste

Instructions

  1. In a large pot, heat olive oil over medium heat. Add onion and garlic, cook until onion is translucent.

  2. Add carrots, celery, oregano, and thyme. Cook for 5 minutes.

  3. Pour in chicken broth and bring to a boil.

  4. Add rice and reduce heat to low. Cover and let simmer for 20 minutes or until rice is cooked.

  5. Add shredded chicken and continue to cook until heated through, about 5 minutes.

  6. Season with salt and pepper to taste.
