Ingredients

  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp salt
  • 6 tbsp cold unsalted butter, cut into small pieces
  • 3/4 cup buttermilk
  • 1 lb breakfast sausage
  • 1/4 cup all-purpose flour
  • 3 cups whole milk
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 450°F.

  2. In a large bowl, whisk together flour, baking powder, and salt.

  3. Using a pastry cutter or your hands, cut in the cold butter until the mixture resembles coarse crumbs.

  4. Make a well in the center of the mixture and add the buttermilk, stirring until the dough comes together.

  5. Turn the dough out onto a lightly floured surface and knead lightly.

  6. Roll the dough out to 1/2 inch thickness and cut into biscuits using a biscuit cutter or glass.

  7. Place on a baking sheet and bake for 12-15 minutes or until golden brown.

  8. While the biscuits are baking, cook the sausage in a large skillet over medium heat, breaking it up into small pieces with a wooden spoon.

  9. Sprinkle the flour over the sausage and stir to combine.

  10. Gradually whisk in the milk, stirring constantly until the mixture thickens.

  11. Reduce the heat to low and let simmer for 5-10 minutes, stirring occasionally.

  12. Season with salt and pepper to taste.

  13. Serve the sausage gravy over the warm biscuits.
