How To Make Arnaud’s Bananas Foster French Toast

A decadent twist on classic French toast with caramelized bananas and spiced rum sauce.

Ingredients

  • 8 slices of brioche bread
  • 4 ripe bananas, sliced
  • 1/4 cup of unsalted butter
  • 1/2 cup of dark brown sugar
  • 1/4 cup of heavy cream
  • 1/4 cup of dark spiced rum
  • 1 tsp of cinnamon
  • 4 eggs
  • 1/2 cup of milk
  • 1 tsp of vanilla extract
  • 1/4 tsp of salt

Instructions

  1. In a large skillet, melt butter over medium heat. Add brown sugar, stirring until dissolved, then add sliced bananas and cinnamon. Cook, stirring occasionally, until bananas are caramelized, about 5-7 minutes.

  2. In a separate pan, mix heavy cream and spiced rum over medium heat until heated through. Set aside.

  3. In a shallow bowl, whisk eggs, milk, vanilla extract, and salt until combined. Dip each brioche slice into the egg mixture, coating each side.

  4. Heat a non-stick skillet over medium heat and cook the brioche slices until golden brown, about 2-3 minutes per side.

  5. To serve, place two slices of French toast on each plate and top with caramelized bananas. Drizzle spiced rum sauce over the top.
