Ingredients

  • 1 lb turtle meat, cleaned and chopped
  • 1/2 cup flour
  • 1/2 cup butter
  • 1 onion, chopped
  • 1 green bell pepper, chopped
  • 3 stalks celery, chopped
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 1/2 tsp dried thyme
  • 1/2 tsp dried oregano
  • 1 bay leaf
  • 1/2 cup sherry
  • Salt and pepper, to taste
  • Hot sauce, to taste

Instructions

  1. In a large pot, heat butter over medium-high heat. Add flour and stir constantly to make a roux. Cook until the roux turns a caramel color.

  2. Add onion, bell pepper, and celery to the pot. Cook until the vegetables are tender.

  3. Add garlic and cook for 1-2 minutes until fragrant.

  4. Add chicken broth, turtle meat, thyme, oregano, and bay leaf. Bring to a boil then reduce heat and simmer for 2 hours.

  5. Add sherry and season with salt, pepper, and hot sauce to taste.

  6. Serve hot with crusty bread.
