  • 6 cups mixed salad greens (such as arugula, lettuce, spinach, etc.)

  • 1/4 cup olive oil
  • 1/4 cup lemon juice
  • 1/2 tsp dijon mustard
  • salt and pepper to taste


  1. Rinse the greens and herbs and pat them dry.

  2. Tear larger leaves into bite-sized pieces.

  3. Combine the greens, herbs, and chives in a large salad bowl.

  4. In a separate small bowl, whisk together the olive oil, lemon juice, dijon mustard, salt, and pepper.

  5. Pour the dressing over the salad and toss well to combine.
