Ingredients

  • 1 lb ground chicken
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • Salt and pepper to taste
  • 8 small corn tortillas
  • Toppings of choice (shredded lettuce, diced tomatoes, avocado, cheese, etc.)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add onion and garlic and cook until softened, about 2-3 minutes.

  3. Add ground chicken and cook until browned, breaking it up with a spatula as it cooks.

  4. Add chili powder, cumin, paprika, and salt and pepper to taste.

  5. Cook for an additional 2-3 minutes.

  6. Assemble tacos by warming tortillas and adding chicken mixture and toppings of choice.
