Ingredients

  • 1 lb ground chicken
  • 1 cup uncooked long-grain white rice
  • 2 cups water
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil

Instructions

  1. In a large skillet, heat the olive oil over medium-high heat.

  2. Add the ground chicken and cook until browned and cooked through, about 5-7 minutes.

  3. Add the rice, water, garlic powder, onion powder, smoked paprika, cumin, salt, and black pepper to the skillet and stir to combine.

  4. Bring the mixture to a boil, then reduce the heat to low, cover and let simmer for 15-20 minutes, or until the rice is tender and most of the water has been absorbed.

  5. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork and serving.
