How To Make Ground Chicken Stuffed Peppers Recipe

Delicious and healthy stuffed peppers filled with ground chicken and veggies.

Ingredients

  • 4 large bell peppers, halved and seeded
  • 1 pound ground chicken
  • 1/2 onion, chopped
  • 1/2 cup frozen corn
  • 1/2 cup black beans, rinsed and drained
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup cooked rice
  • 1/2 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 375°F.

  2. In a large skillet, cook the ground chicken, onion, and garlic until the chicken is browned.

  3. Add the frozen corn, black beans, chili powder, cumin, salt, and pepper to the skillet. Cook until everything is heated through.

  4. Stir in the cooked rice.

  5. Place the bell pepper halves in a baking dish. Spoon the chicken mixture into each pepper half.

  6. Cover the dish with foil and bake for 25 minutes.

  7. Remove the foil and sprinkle the shredded cheddar cheese over the top of the peppers.

  8. Bake uncovered for another 10 minutes or until the cheese is melted and bubbly.
