Ingredients

  • 1 lb ground chicken
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 yellow squash, chopped
  • 1 zucchini, chopped
  • 1 tsp smoked paprika
  • 1 tsp cumin
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.

  2. Add ground chicken and cook until no longer pink, breaking it up with a wooden spoon.

  3. Add onion and garlic and cook for 2-3 minutes until fragrant.

  4. Add red bell pepper, yellow squash, zucchini, smoked paprika, cumin, salt, and black pepper.

  5. Stir well and cook for 10-12 minutes until vegetables are tender.

  6. Serve hot and enjoy!
