- 2 chicken breasts, cooked and shredded
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 can of sweetcorn
- 4 cups of chicken broth
- 1 cup of heavy cream
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

In a large pot, sauté the onion and garlic until fragrant.

Add the shredded chicken, sweetcorn, and chicken broth to the pot. Bring to a boil.

Reduce the heat and simmer for 10 minutes.

Using an immersion blender, blend the soup until smooth and creamy.

Stir in the heavy cream and season with salt and pepper.

Continue to cook for an additional 5 minutes.
