Ingredients

  • 4 boneless, skinless chicken thighs
  • 1/2 cup of basil pesto
  • 1 cup of breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

  2. Season the chicken thighs with salt and pepper on both sides.

  3. Spread a layer of basil pesto on each chicken thigh.

  4. In a shallow dish, mix together the breadcrumbs and Parmesan cheese.

  5. Coat each chicken thigh in the breadcrumb mixture, pressing it onto the pesto to adhere.

  6. Place the coated chicken thighs on the prepared baking sheet.

  7. Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the crust is crispy and golden brown.
