Ingredients

  • 4 medium-sized beets
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • 4 oz goat cheese, crumbled
  • 1/4 cup chopped walnuts
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Trim and wash the beets, then pat dry with a towel.

  3. In a bowl, toss the beets with olive oil, salt, and pepper until well coated.

  4. Place the beets on a baking sheet lined with parchment paper.

  5. Roast in the preheated oven for 40-45 minutes, or until tender when pierced with a knife. Let cool slightly.

  6. Once cooled, remove the skin from the beets and slice into wedges or rounds.

  7. Arrange the beet slices on a serving platter.

  8. Sprinkle the crumbled goat cheese and chopped walnuts over the beets.

  9. Garnish with fresh parsley.

  10. Serve and enjoy!
