How To Make Roasted Beets with Goat Cheese and Walnuts Recipe

Ingredients
- 4 medium-sized beets
- 2 tbsp olive oil
- Salt and pepper, to taste
- 4 oz goat cheese, crumbled
- 1/4 cup chopped walnuts
- Fresh parsley, for garnish
Instructions

Preheat the oven to 400°F (200°C).

Trim and wash the beets, then pat dry with a towel.

In a bowl, toss the beets with olive oil, salt, and pepper until well coated.

Place the beets on a baking sheet lined with parchment paper.

Roast in the preheated oven for 40-45 minutes, or until tender when pierced with a knife. Let cool slightly.

Once cooled, remove the skin from the beets and slice into wedges or rounds.

Arrange the beet slices on a serving platter.

Sprinkle the crumbled goat cheese and chopped walnuts over the beets.

Garnish with fresh parsley.
