  • 1 1/2 cups mashed sweet potatoes
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup evaporated milk
  • 2 eggs
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground nutmeg
  • 1/4 tsp salt
  • 1 unbaked 9-inch pie crust

Instructions

  1. Preheat the oven to 350°F (175°C).

  2. In a large bowl, combine the mashed sweet potatoes, granulated sugar, brown sugar, evaporated milk, eggs, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Mix until well combined and smooth.

  3. Pour the sweet potato mixture into the unbaked pie crust. Smooth the top with a spatula.

  4. Place the pie on a baking sheet and bake for 55-60 minutes, or until the center is set and the edges are golden brown.

  5. Remove from the oven and let cool completely before serving.
