Ingredients

  • 8 oz buckwheat soba noodles
  • 1/4 cup soy sauce
  • 1/4 cup rice vinegar
  • 2 tbsp sesame oil
  • 1 tbsp honey
  • 2 garlic cloves, minced
  • 1 tbsp ginger, minced
  • 1/4 cup chopped scallions
  • 1/4 cup toasted sesame seeds
  • 1 cup shredded carrots
  • 1 cup thinly sliced cucumber
  • 1 cup shredded red cabbage

Instructions

  1. Cook soba noodles according to package instructions. Drain and rinse with cold water.

  2. In a small bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, garlic, and ginger.

  3. In a large bowl, toss noodles with dressing, scallions, sesame seeds, carrots, cucumber, and red cabbage.

  4. Serve chilled.
